December 2007:

Fermentations are finishing in the cellar.
The wines already racked show great density, subtle aromas and ripe acidities. The ageing will bring the perfect unity.



In the vineyard, the winter is definitly here: leaves have fallen, the vine is nacked. The temperatures approaching 0°C make the soil hard. Since the tractor doesn't risk to pack the soil, we pre-pruned our vines. The last 40 cm are cut to facilitate the woodfall.



End of this month, André began the pruning. This first work for the new vegetative cycle is fundamental, because the it influences the future of the vine plant. Each vine has to be pruned to have a balanced vigor: it is a made to measure work.
